Thanks to its restructuring and modernization, the Torre della Pagliazza, the oldest in the entire Florence, has returned to live new life. Being the home of a prestigious hotel as is the Hotel Brunelleschi was not enough: inside you will also find a sophisticated gourmet restaurant, the Santa Elisabetta, the Tower Bar on the ground floor and, finally, another typical restaurant, the Osteria della Pagliazza.
The tension towards excellence is what characterizes the entire hotel as a whole and the Osteria is certainly not less. Imagine eating the great classics of Italian cuisine revisited in a gourmet key among the ancient Byzantine walls of the tower, illuminated by warm lights and a thousand miles away from the bustle of the center, always invaded by swarms of tourists.
A true meeting of artistic technique and gastronomy takes place in the elegant and classic menu, which offers classic dishes but also interesting tasting options that will make you explore the multitude of flavors, smells and colors that the cuisine of this excellent restaurant is capable of to produce also thinking of vegetarians and vegans with ad hoc options.
Among the first courses are the potato ravioli with thyme asparagus, pork lard and truffle and the incredible spaghetti with guinea fowl ragout with spring mushrooms. Among the latter, however, we find an excellent lamb glazed on burned potato, with cashews and mushrooms; braised pork leg and the ever-present crunchy octopus with roots, anchovies and rocket. At the end of the meal there are also desserts like millefeuille with ganache and mango, pistachio Bavarian or a selection of homemade ice creams.
Ask the maître for advice to best combine your dishes with one of the fabulous wines in the cellar and your meal will be absolutely perfect. And, if the weather is nice, sit outside, enjoying the view of the historic square. Whatever your desire, at the Osteria della Pagliazza, it will be granted. So think big and you will have equally great results.
